Guacamole

This is a kid-friendly recipe that the whole family can prepare together! Created for CUESA’s Foodwise Kids program, it’s particularly well-suited for kids ages 6 to 12.
Our young chefs love when avocados are in season because of guacamole. Kids can dip anything in guacamole, not just tortilla chips. Guacamole can help make new, intimidating vegetables look approachable, so consider all varieties of crunchy vegetables: broccoli, celery, carrots, or sugar snap peas! To quickly ripen avocados, place in a paper bag with a banana or apple, fold closed, and let sit at room temperature. Check on it each day, and it should ripen more quickly than if left alone.
This recipe is great for young chefs learning how to mash and mix ingredients. Older chefs can practice using a knife to cut an avocado in half. Adults, help take out the seed with a knife. Young chefs can scoop out the seed with a tablespoon.

INGREDIENTS
2 ripe avocados
1 clove garlic (optional)
1 lemon
Salt, to taste
MATERIALS
Knife
Cutting Board
Small Bowl
Grater (optional)
Tablespoon
Potato masher or fork
PREPARATION
1. Wash your hands with soap and water. Thoroughly rinse fruits and pat dry.
2. Ask an adult to help cut avocados, and remove the pits. Use a spoon to scoop out avocado meat into a bowl.
3. Peel the clove of garlic. Ask an adult to mince the garlic with a knife, or you can use the small holes of a grater. Add the garlic to the bowl with avocado.
4. Roll the lemon with your palm onto a table. Push down on the lemon as you roll it back and forth. This loosens the juice inside the lemon.
5. Ask an adult to cut the lemon in half. Squeeze about a tablespoon of lemon juice into the bowl of avocado and garlic. Be sure to remove any seeds.
6. Use a fork or potato masher to mash the avocado in a bowl. Season with salt, and taste. Add more lemon juice if needed.
