Shio Koji Avocado, Mushroom, and Tuna Poke

INGREDIENTS
10 tablespoons (5/8 cup) of Aedan Fermented Foods Shio Koji
3 avocados, skin removed and diced in bite-size chunks
2-3 tablespoons lemon juice (about half a lemon)
2-3 tablespoons sesame oil
1 pound mushrooms, King trumpet
2-3 tablespoons olive oil
Black pepper, to taste
1 pound of poke grade tuna, diced in larger bite-size chunks
1-2 stalks green onion, finely chopped
1 tablespoon minced ginger
2 tablespoons toasted sesame seeds
2 cups rice, cooked
PREPARATION
To prepare Shio Koji Avocado: add diced avocado to a bowl and gently toss with lemon juice, 2-3 tablespoons of shio koji, and 1 tablespoon of sesame oil.
To prepare Shio Koji Mushroom: Cut up mushrooms and marinate with 3 tablespoons of shio koji for at least 10 minutes. Sauté marinated mushrooms on pan over medium heat with olive oil and add black pepper to taste.
To prepare Shio Koji Tuna Poke: In a bowl, diced tuna, 3 tablespoons of shio koji, and 1-2 tablespoons of sesame oil, and mix well. Top with shio koji green onion mix.
To make Shio Koji Green Onion Mix: Toss green onion, minced ginger, sesame seeds, sesame oil, and shio
koji in a bowl.
Enjoy each individual dish over rice or combine together to make new flavor combinations!
