Confetti Slaw

Makes about 2 quarts
INGREDIENTS
2 tablespoons honey
¼ cup lime juice
2 tablespoons lemon juice
½ tablespoon dijon mustard
⅓ cup olive oil
Salt and pepper to taste
3 cups shredded red cabbage
1½ cup grated carrot
4 thinly sliced green onions
1 sliced red bell pepper
1 sliced yellow bell pepper
1 cup chopped cilantro
PREPARATION
Whisk together honey, lime juice, lemon juice, mustard, and olive oil. Add salt and pepper to taste.
In a large bowl, fold together the prepped cabbage, carrots, onions, and bell peppers. Stir in dressing.
Mix in cilantro immediately before serving.
