Sweet Potato Chipotle Gratin

Makes 2-4 servings
INGREDIENTS
1½ cups heavy cream
1 tablespoon puréed chipotle chilies in adobo
Salt
1 large sweet potato, sliced thinly
PREPARATION
Preheat oven to 350˚F. In a medium bowl, mix together the cream, pureed chipotles, and salt to taste. Add the sweet potato and, with your hands, gently combine, making sure all sweet potato slices are coated with the cream/chipotle mixture. Transfer to a buttered 8 by 8-inch glass pan and bake for 30 minutes. Serve hot or warm.
